The New England Chowder Compendium is a project of Special Collections and University Archives at the University of Massachusetts Amherst. Pulling from the archives of the Beatrice McIntosh Cookery Collection it hopes to investigate the hows and whys of chowder’s rise to its place as an essential part of New England regional cuisine through recipes, advertisements, and other forms of visual expression. We are actively seeking new submissions.

    Does your Chowder Compendium deal with the issue of a substitute for Crown Pilot Crackers? Everyone knows that Crown Pilot were the perfect crackers to crumble over chowder, but they have been discontinued by Nabisco due to “low demand.” I have spent weeks looking for a replacement, even going so far as to research recipes for hardtack… but, so far, nothing is as good as Crown Pilot.
